Nizip Bulgur |
1 Head finely chopped or crushed Garlic
1 lb stemmed and shredded Kale, Swiss Chard, Beet Greens or Arugula
1/2 tsp Black Pepper
1 cup coarse Bulgur
1/2 cup Olive Oil
4 chopped medium Onions
2 1/2 tsp Red Pepper paste (you can substitute Tomato Paste)
1/4 tsp Maraş
Red Pepper Flakes
Salt
1/2 cup
Water
Scallions
Lemon Wedges

Sauté onions,
garlic and red pepper in olive oil. Add water, red pepper paste, salt, black pepper and
bring to simmer. Add bulgur. Stir. Add greens. Reduce to low heat, cover
with paper towel and let steam for up to 30 minutes pr until greens are
wilted - make
sure it does not burn. Remove from heat, mix all together. Garnish with scallions and lemon wedges. Can be
served hot or room temperature.
