1 container Mountain High Plain Yogurt
(NOT Non-Fat)
1/2 to 1 container water (you choose the thickness - I usually use 3/4)
3 cucumbers, seeded and either diced or shredded
1/2 head fresh crushed or finely minced garlic (do not use prepared
garlic)
4 Tbs Olive Oil (1/2 Tbs for each bowl)
1 tsp salt
1 Tbs Dried Mint (in summer you can add a fresh mint sprig to each bowl
for garnish) |
Serves 6 - 8 people.
Mix yogurt, salt and water with whisk until well mixed and foamy. Stir
in cucumbers and garlic. Serve in individual bowls. Top each serving
with a dash of crumbled dried mint, and drizzle with olive oil, if fresh
mint is available then you can add that to make it look pretty.
