3 Cups Wheat
1 lb. Plain Yogurt
6 Cloves Fresh Garlic, peeled and chopped
3 Tbs Mint
3 Tbs Tomato Paste
6 Tbs Butter
Salt to taste |
Wash wheat in warm
water. Put wheat in large pot with 1 gallon water. Boil wheat for 45
minutes, then turn down heat to low/simmer, cover and for 3-4 hours
until wheat is cooked. Add water if necessary. Soup should not be thick
all the way through. There should be about 1/3 liquid on top. After
wheat is cooked, add yogurt but mix well so there are no clumps of
yogurt. Add garlic. In separate skillet, melt butter add tomato paste
and mint. Cook until thick and mixed well. Pour on top of soup. Serve.
